Course Description

The most common cause for all class 1 FDA food recalls involves the mismanagement of allergens. Allergen Management is a challenging food safety issue in any food manufacturing plant. With the FASTER Act and the addition of sesame, there are now 9 major food allergens. This course will elaborate on the major food allergens and how they affect current Good Manufacturing Practices (cGMPs) and Food Safety Principles for food manufacturers and suppliers.

In this interactive course, we will discuss:

  • Regulations and Laws Pertaining to Controlling and Labeling Allergens
  • Managing Your Allergen Programs
  • Verification and Validation Activities
