Course Description
The most common cause for all class 1 FDA food recalls involves the mismanagement of allergens. Allergen Management is a challenging food safety issue in any food manufacturing plant. With the FASTER Act and the addition of sesame, there are now 9 major food allergens. This course will elaborate on the major food allergens and how they affect current Good Manufacturing Practices (cGMPs) and Food Safety Principles for food manufacturers and suppliers.
